Fishing Hat
No fishing trip is complete without a fishy hat. When you are out fishing in the sun all day, it really makes a difference to have a hat to help shield you from the sun. I used to just wear a baseball cap, but I found these visors from Pelagic. If you don't have a bald spot, these are a great option because they keep you cooler than a regular baseball cap. If you do have a bald spot, you are probably better off going with a full hat.
I know this page looks like an ad for Pelagic, but I don't receive anything from Pelagic. After trying a variety of brands in some pretty extreme conditions, I just tend to like their stuff. However, there are lots of other good brands. All the hats below work well.

Neck Cover
If you are going to be fishing in direct sun, these neck coverings can be really helpful. On my last trip to Bolivia I forgot to bring it one day and I really felt the difference. Besides the sun protection, you can dip them in cold water when you are hot and they can help cool you down. They also offer some insect protection for things like sand flies that can't bite through clothing. It took me a while to come around to using these, but now I rely on them quite a bit. If you don't use them and fish in the sun, give them a try. Though slightly more expensive, the Under Armour one is cooler so if you are going to the tropics that might be the way to go.

Fishing Shirts
If I'm fishing somewhere hot, as I usually am, having a light and breathable shirt can be the difference between a long uncomfortable day and a good day. On really hot days, it can be the difference between dangerous heat exhaustion and comfort. I used to wear cotton, but over time I've come to like the light polyester shirts that breathe well and dry fast. They are expensive, but worth the money in my opinion. Even in hot climates, I primarily wear long sleeve shirts for sun protection. If I'm fishing somewhere with insects, I like a little thicker shirt to prevent bites. There are some shirts that have insect repellent built in, and I like those.

Fishing Pants
I like wearing pants or shorts that dry quickly, which is important out on the water. I like pants that are lightweight and have some secure pockets. I also like pants that have zip off bottoms so that I can turn them into shorts. If I'm in a buggy area, I like the insect repellent clothes.
